Ground Beef and Veggie Stir Fry

This 20-minute weeknight wonder will have a healthy, hearty meal on the table in no time! Packed with protein, iron and potassium, this meal is perfectly replenishing after a long day. Double the recipe for an easy lunch tomorrow.

Ground Beef and Veggie Stir Fry

  • 1 lb 90% lean ground beef/turkey
  • 4 cups raw baby spinach
  • 2 medium zucchini, spiralized or sliced thin
  • 12 oz can diced tomatoes
  • 1 cup garden mushrooms, chopped
  • 2 tsp pepper
  • 2 tsp garlic powder (or 1 fresh clove)
  • 1 tsp salt
  1. Brown meat in a medium skillet, adding spices as it cooks.

  2. Once meat is cooked, add raw spinach, spiralized zucchini and diced tomatoes and bring to a simmer.

  3. Dinner is ready when zucchini is tender and spinach is wilted. Serve alongside a serving of rice or sweet potato for a complete meal.
