Healthy No-Bake Oatmeal Cookie Bites

At night, I crave something sweet, so instead of trying my hardest to resist those cravings, I decided to find a more nutritious option. Enter, No-Bake Oatmeal Cookie Bites.

I LOVE oatmeal cookies, but the excess sugar and saturated fat in traditional recipes means I don’t eat them as often as I would like. The tradeoff is a stellar cholesterol profile and ability to maintain my weight pretty easily (and it wasn’t always easy!). BUT, when there is an opportunity to create the same flavor profile of my favorite treat using ingredients I am proud to put in my body…game on!

Reap the benefits of Omega 3-rich flax seed, unsaturated fat from peanut butter and cholesterol-lowering beta glucan from oats. This is a sweet snack you can feel good about! Trust me, you might get addicted to the No-Bake Oatmeal Cookie Bites 🙂

No-Bake Oatmeal Cookie Bites

  • 2 1/2 cups old fashioned oats
  • 1 cup natural peanut butter (no sugar added)
  • 1 cup raisins
  • 1/2 cup honey
  • 1/4 cup ground/milled flax seed
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  1. Combine all ingredients in a large mixing bowl. Use a sturdy wooden spoon to blend. The mix should pinch together and stick. Add more honey if mix is too dry, or more oats if too wet.

  2. Roll/press dough together in small, palm-size balls (about 2 tablespoons). Arrange on an ungreased baking sheet until mixture is gone.

  3. Enjoy immediately, or let them set in the refrigerator.

Storage: store balls in a plastic bag and store in the freezer for up to 3 months. Don’t worry, they won’t last that long!
