No-Bake Oatmeal Cookie Bites

Ingredients
  

  • 2 1/2 cups old fashioned oats
  • 1 cup natural peanut butter (no sugar added)
  • 1 cup raisins
  • 1/2 cup honey
  • 1/4 cup ground/milled flax seed
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp salt

Instructions
 

  • Combine all ingredients in a large mixing bowl. Use a sturdy wooden spoon to blend. The mix should pinch together and stick. Add more honey if mix is too dry, or more oats if too wet.
  • Roll/press dough together in small, palm-size balls (about 2 tablespoons). Arrange on an ungreased baking sheet until mixture is gone.
  • Enjoy immediately, or let them set in the refrigerator.

Notes

Storage: store balls in a plastic bag and store in the freezer for up to 3 months. Don't worry, they won't last that long!
